Foodborne pathogens face a wide array of host defenses that they must survive and overcome to cause infection. These defenses range from biochemical and physical host factors including saliva, gastric acid, peristalsis, intestinal mucous and the barrier formed by enterocytes or intestinal epithelial cells (IEC), to the different levels of immune responses mounted by the host at the level of gut-associated lymphoid tissue (GALT).
